Name: Cod Fish Monte das Figueiras Style
Ingredients (Serves 4): 600 grams of dried cod, 800 grams of potatoes 2 dl olive oil, 150 grs of onions, 3 cloves of garlic, 50 grams flour, 1 bunch of parsley, salt to taste
Preparation: Cut the salted and dried cod into squares about 5 cm. Soak in cold water, with an advance of 24 hours.
Clean the cod scales and bones and put the drain.
In a pan, apart, put the olive oil and light the fire to warm.
Pass the cod for flour and let sear on both sides.
After blond, remove to a platter.
Chop the garlic and cut the onion into rings.
Sauté garlic and onion in olive where the fried cod and lie about it. Sprinkle with chopped parsley.
In a pan, the party, bake the potatoes with the skin in water and a little salt.
Once cooked, drain the water and let cool.
Peel the potatoes, cut into rings and thick, in a frying pan, heat the olive oil.
Serve around the cod.
Hint: Use preferably with a cod thickness of about 3 cm.
